I can't say I've actually used other than the default codeset.  

The ASCII to EBCDIC translation table is used instead of the iconv
function call.  Therefore your text files may not be in the codeset you
expected.  On the other hand, I beleive the ASCII to EBCDIC table is
symetrical, so you'll get out whatever you put in.

If all else fails, there is always marking the file as binary, and no
translation occurs, but you loose the ability to do diffs and merges.
